Savory Toast & Pocket Symphony

Are you ready for the easiest recipe ever to grace the pages of Licorice Pizza Pie? I almost didn’t feel like I could make this a pairing because it was so easy. I had a lot of house to clean, the sun was shining and I wanted something refreshing, light, easy and that would allow me to make it to our rooftop to sit (snuggled in my jacket, its still below 40 here most days) in the sun and feel its warm rays on my face.

Notice I didn’t put cottage cheese in the title. People have something against cottage cheese, potentially ever since the low-fat movement went on a rampage in the 80s. I think its a great vegetarian high protein, low fat source of energy. It does take some sprucing up, fresh fruit, salt and pepper or my savory take on it here. Think of this as a healthier take on butter on toast with radishes. This would last you much longer and provide some additional calcium.

Air has always been mellow music to me. Music that I can bask in a warm sunny glow and allow my thoughts to wander and explore. After I was finished with my apartment deep clean, I put Pocket Symphony on, crafted some tasty toast and finished out my afternoon in the sun. What would you pair an Air album with? Pocket Symphony was perfect for this sunny day – light, mellow and just enough brightness to complement my meal and afternoon.


Savory Cottage Cheese Toast 

Serves 2

Ingredients

  • 1 cup of fat free cottage cheese
  • 1 tbsp of extra virgin olive oil
  • 1 tbsp parsley, chopped
  • 1 tbsp basil, chopped
  • salt and pepper to taste
  • 2-4 slices of hearty rye bread (or whole wheat bread of your choice), toasted
  • 5 radishes, thinly sliced

Instructions

  1. Mix the first 5 ingredients together in a bowl.
  2. Top the bread with a generous helping of the cottage cheese, about 1/4 cup or more each slice (depending on the size of your toast).
  3. Place sliced radishes on top and enjoy!
