Crispy Baked Chicken Breast with Homemade Ranch & Men Amongst Mountains

I was having a strange craving – for those fried crispy chicken cutlets that you often find on salads, between crappy white hamburger buns or next to sides of ranch. I don’t know anywhere in Seattle that makes these, so I decided to make my own. I didn’t want to deep fry them, because I didn’t want to feel weighed down after I ate them and didn’t want to clean up the deep fry mess. So I baked them. AND THEY TURNED OUT AMAZING.

I’ve been wanting to pair The Revivalists’ Men Amongst Mountains for sometime – it has such a great sound. Nothing was matching those with what I felt like the vibe of the album needs food wise. Until I wanted to make these crispy chicken cutlets! Its good vibes all around that end with a light, deliciously crispy chicken that you can even still call healthy.



Crispy Baked Chicken Breast

Makes 5-7 servings

Ingredients

  • 1 whole egg plus 1 egg yolk
  • 1/2 cup non-fat greek yogurt
  • 1 tbsp avocado oil mayonnaise
  • 1 tsp kosher salt
  • 4 whole skinless, boneless chicken breast, cut into fourths
  • 1/4 cup of avocado oil
  • 4 cups of panko breadcrumbs
  • 1 tbsp mustard powder
  • 1 tbsp buttermilk powder
  • salt and pepper (1/2 tsp of each)

Instructions

  1. Mix first four ingredients together in a large bowl. Set aside.
  2. Using a meat mallet (or rolling pin, if you are like me and like multipurpose instruments), pound the chicken into 1/4 inch thick cutlets. Repeat with all cuts of the chicken breast and place in the bowl with the egg/yogurt mixture.
  3. Preheat oven to 425 degrees.
  4. Add the avocado oil to a large frying pan and heat until shimmering. Add the panko breadcrumbs. Cook until the breadcrumbs have taken on a gorgeous golden brown color. Stir frequently to ensure even browning. Cook about 5-10 minutes until youve reached the color you like. Let cool about 10 minutes.
  5. Prepare a baking sheet with a wire rack set inside.
  6. Using your hands, press one of the chicken cutlets into the panko breadcrumbs, pressing to ensure they stick. Flip the chicken cutlet over and repeat. Place on the wire rack. Continue this for all chicken pieces.
  7. Place the chicken in the oven and bake for 5-8 minutes until cooked through. If desired, temp them to ensure they have reached 165 degrees.

 

Homemade Ranch Dressing 

Make 4 oz

Ingredients

  • 4 oz of nonfat plain Greek yogurt
  • 2 tsp of buttermilk powder
  • 1 tsp dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp nonfat milk
  • salt and pepper to taste

Instructions

  1. Mix all ingredients together and place in the fridge. Let sit for at least 60 minutes to let the flavor fully develop.
  2. Garnish with paprika and dill before serving, if desired.
