Summer! I refuse to believe its almost over. I know everyone says this every year and yet, while being in Seattle, it carries a lot more weight than I ever thought it would. So I’m in permanent denial, at least until my watermelon stash runs out. How am I stashing watermelon? Check out this recipe – the cubes are frozen to make delicious watermelon last even longer.
Donna Summer can turn up the mood in any arena and always manages to at my house – as soon as I play this album, I’m singing at the top of my lungs and dancing disco like Saturday Night Fever , but better – because its Donna Summer! Let’s dance away the last of the long nights and long days while we wear dresses and short skirts long after the temps outside say we should. Cheers to summer!

Watermelon Daiquiri
Makes 2 cocktails
Ingredients
- 4 cups of frozen watermelon cubes
- 1/2 c light rum
- 2 dropperfuls of salt solution (cocktail saline solution)
- 1/4 c of aloe juice
- 1/2 of one lemon, juiced
Instructions
- Blend all ingredients together in a blender or food processor until smooth.
- Top with a mint sprig or straw and enjoy!
