I downloaded this album when it first came out right before I went camping for the weekend. It was one of three albums I had for campfire music. It wasn’t my favorite album of that weekend. This album is so much more than campfire music. It wasn’t my favorite album of that camping weekend but it is so high on my list for 2018 albums. Its amusing to me now, it didn’t fit the crackling fire but it fits so many other moods I’m in. Walking home? It works. In a mood to cuddle on the couch under a warm blanket? This works. This album showcases Brandi Carlile’s voice by accentuating it with hauntingly beautiful orchestral scores. The emotion in the album really carries this high on the list of 2018 albums for me.
So why did I pair it with Lentil, Kale and Farro soup? It was a cold, rainy day in Seattle, or as we say in Seattle, just another day, and The Joke started playing from this album and as the drizzle continued outside, I knew that this album was going to be perfect with a warming, hearty soup that leaves you feeling good inside and out. Think of it almost like cleansing yourself just as Brandi seems to do in this album. Start fresh, new and experience your emotions, sing them out if you have to but let this album remind you that your emotions deserve a few seconds on the dashboard.

Farro, Kale and Lentil Soup
Ingredients
- ½ onion, finely diced
- 2 garlic cloves, finely diced
- 1 carrot, finely diced
- 1 celery, finely diced
- 2 cups of turkey stock
- 1 bouillon cube
- 5 leaves of lacinato kale
- 1 cup cooked farro
- 2 cups of cooked lentils
- 1 tsp red wine vinegar
- Salt and pepper to taste
Instructions
- Saute the onion and garlic in your soup pan with a splash of olive oil until the onions are just starting to soften.
- Add the carrot and celery and mix well.
- Add the broth, bouillon cube and bring to a boil. Once boiling, kale and cook for about 5 minutes.
- To the boiling soup, add the farro and lentils and cook for a few minutes until they are warmed through.
- Add the red wine vinegar and salt and pepper to taste. Enjoy!
Notes
Feel free to mix it up! Instead of stock, try the liquid from a can of beans, water and the bouillon cube. Add a different variety of veggies, aiming to keep the proportions similar.
